Ceviche Ingredients
2 pounds of Halibut (or any white or blue fish)
1/2 Aji Amarillo pepper or choice of spice such as (rocoto or habanero)
1 garlic clove, finely minced
1/2 Tbsp salt
Small bunch of cilantro
1/2 medium purple onion, slice super thin
1 celery stalk, slice super thin
Juice of 3 limes, make sure limes are ripe (do no use bottled lime juice please π₯΄)
1 cup of tigers milk
Choclo corn ( boil with 4 cups of water and 1 1/2 tbsp sugar)
2 to 3 sweet potatoes (bake at 380 Degrees (F) for 1 hour, allow to cool)
Serve with butter lettuce and plantain chips π€
Fish broth ingredients
1/2 pound of fish ( white fish scraps or heads)
2 celery stalks
1/4 purple onion
1 1/2 inches of fresh ginger, remove skin
Small bunch of cilantro
3 cups of water
Cook on medium heat for 5 to 7 minutes, Strain, and cool
Tigers milk ingredients
1/2 pound white fish
1 inch of fresh ginger, remove skin
4 garlic cloves
1/2 Aji Amarillo pepper or choice of spice such as (rocoto or habanero)
2 celery stalks
1 cup of fresh lime juice (do no use bottled lime juice please π₯΄)
2 cups of fish broth (As listed above)
1 Tbsp Salt (adjust to taste, I like it with 1 1/2 Tbsp of salt)
1/4 of a white onion
Small bunch of cilantro
