The Ultimate homemade chicken broth

Hello family and friends! I’m re-sharing these binge worthy stock and broth videos, compiled into a comprehensive piece. Please enjoy! Thank you for your continued support and love for Nanaaba’s kitchen.🙏🏽❤️

INGREDIENTS:
* 6 & 1/2 lbs chicken leg quarters
* 1 large ginger root, anoit 2 thumb sizes
* 1 large onion
* 3 large carrots
* 1 bulb garlic
* 8 celery sticks
* leftover fennel (optional)
* 1 bundle of parsley
* 1 sprig of rosemary
* 1 sprig of sage with about 6 leaves
* 5 sprigs of thyme
* 1 tbsp fennel seeds
* 1 tsp black pepper corns
* 1 tsp red pepper corns
* 1 tsp white pepper corns
* water (about 3 gallons)
* salt to taste

*** combine all ingredients in a 21 qt stockpot, and cook for 2 hours, or until the desired concentration is reached.***

*** adjust amounts of ingredients to fit your stock pot size.***

Beef Bone stock/broth recipe
* 6 lbs beef bones cleaned with water, vinegar, and salt
* 1 large red onion halved
* 3 stalks of celery
* 3 large carrots
* 1 bulb of garlic halved
* 1 Anaheim pepper broken into chunks
* 1 red bell pepper quartered
* 1 sprig of fresh rosemary
* 5 small bay leaves
* 1 tbsp whole black peppercorns
* 2-star anise
* 1 tsp aniseed
* 1 tsp coriander seeds
* 1/6 cup olive oil
* pinch of salt and crush black pepper to caramelize bones
* cup of water to kick start formation of stock/broth
* 1 & 1/2 litters of water (add post caramelization of ingredients to form stock)

Bake for 2 hours and strain stock. Let it cool down, and remove solidified fat, then portion for freezer or refrigerator storage.

Quick and Easy to make Flavorful Vegetable Stock/Broth Recipe by roasting your vegetables
INGREDIENTS:
* 1 large red onion
* 3 large carrots
* celery
* 1 bundle of parsley
* 2 large leeks
* 1 red bell pepper
* 2 Anaheim peppers (substitute with green bell peppers
* 4 small bay leaves
* pinch of salt
* pinch of crushed black pepper
* 1 tbsp white or black pepper crushed
* 2 tbsp olive oil
