• 20 ounces cheese tortellini
• 8 ounces cubed fresh mozzarella cheese
• 4 ounces sliced black olives
• 4 ounces cubed salami
• 1 green bell pepper seeded and diced
• 1/2 cup red onion, diced
• 1 zucchini, diced
• 1/4 cup chopped pepperoncinis
• 1/2 pint cherry tomatoes halved

• 2/3 cup olive oil
• 1/8 cup white vinegar
• 1/8 cup lemon juice
• 1 teaspoon salt
• 1 teaspoon dried basil
• 1 teaspoon dried oregano
• 1/2 teaspoon onion powder
• 1/2 teaspoon garlic powder
• 1/2 teaspoon sugar
• 1/2 teaspoon dried parsley
• 1/4 teaspoon black pepper

1️⃣ Cook tortellini to al dente according to package directions. Rinse with cold water and drain. Add to a large mixing bowl. Pour half the dressing right onto the pasta to ensure they do not stick.

2️⃣ Combine chilled tortellini with mozzarella, olives, salami, bell pepper, red onion, zucchini, pepperoncini, and tomatoes in a large mixing bowl or serving bowl.

3️⃣ For the dressing, in a small mixing bowl, whisk together olive oil, vinegar, lemon juice, oregano, salt, onion powder, garlic powder, sugar, parsley, pepper, and basil. Mix well.

4️⃣ Pour dressing over salad and stir to combine. Refrigerate until chilled, at least 1 hour. Serve cold.
