LAY HO MA! This is definitely one of those easy dishes I daydream about. Join me in this episode and learn how to make a delicious spicy rice noodle stir fry inspired by the pad kee mao recipe. Let’s begin!

Ingredients:
3 pieces garlic
small piece ginger
2 green chili peppers
1 red chili pepper
pinch of salt
100g extra firm tofu
4-5 baby bok choy
3 baby corn
1 1/2 tbsp soy sauce
1 tsp dark soy sauce
1 tbsp plantbased oyster sauce
140g flat rice noodles
1/4 cup peanuts
2 tbsp avocado oil

Directions:
1. Roughly chop the garlic and ginger. Optionally, remove the seeds from the chili peppers
2. Place the garlic, ginger, and chili peppers into a pestle and mortar. Sprinkle a pinch of salt, then coarsely crush
3. Pat dry the extra firm tofu and slice into strips. Roughly chop the bok choy and slice the baby corn in half
4. Make the sauce by combining the soy sauce, dark soy sauce, and plantbased oyster sauce
5. Bring some water to boil for the noodles. Then, soak the noodles in the hot water for 3-4min. Stir the noodles occasionally to keep them from sticking
6. Heat up a nonstick pan to medium heat. Add the peanuts and toast for 3-4min. Set aside and place the pan back onto medium heat
7. Add the avocado oil followed by the garlic, ginger, and chili peppers. Sauté for 2-3min (be sure to have a fan on or window open)
8. Add the extra firm tofu and sauté for about 1min. Add the bok choy and baby corn. Sauté for another minute
9. Strain out the noodles and add to the pan. Pour the sauce over the noodles and sauté for another 2-3min
10. Plate the noodles and sprinkle over the toasted peanuts
