The best pumpkin pie ever! Without flour

This pie, usually eaten on Thanksgiving, is perfect to eat for fall / winter. This is the best pumpkin pie in my eyes! If you’ve never tasted it, now is the time! I offer you my Pumpkin pie recipe without flour, therefore gluten-free. A crispy dough and a soft filling. This pie is for 6 to 8 people. Good tasting ! Ps: Happy Thanksgiving everyone!

Ingredients :
300 grams of gluten-free oatmeal (About 3 cups)
50 grams of flax seeds (1/3 cup)
3 tablespoons of millet flakes
2 tablespoons of chia seeds
250 ml of water (1 cup)
2 eggs, beaten
425 grams of pumpkin puree
1 pinch of salt
1 teaspoon of cinnamon
1 teaspoon of vanilla extract
1/4 of a teaspoon of cloves
1/2 teaspoon of ginger
90 grams of brown sugar (¼ cup + 3 tbsp)
140 ml of double cream (1/3 cup + 1/4 cup)
125 ml of double liquid cream (1/2 cup)
1 tablespoon of icing sugar
