Beautiful and delicious…Strawberry fraisier Cake
For vanilla cream or custard
90gms Egg yolks
36gms Corn starch or Custard powder
Simmer milk with scrapped vanilla pod.
Mix egg yolks, sugar and corn starch in a bowl, until it becomes slurry.
Add little hot milk in yolk mixture to temper it.
Then add the yolk mixture to the simmering milk and keep stirring continuously until it becomes thick like custard.
Cover it and chill overnight.
250gms Vanilla cream
6gms Gelatin ( always add 5times chilled water to soak)
250gms Whipping cream
Beat vanilla cream until smooth and add sugar.
Microwave gelatine, cool down a bit then add in vanilla cream.
Whip heavy whipping cream to medium consistency.
Then slowly fold in whipped cream in vanilla custard cream.
Cut strawberries in half.
In a square shape mould add first sponge then arrange strawberries from the sides, inside part facing out.
Fill in the cream mixture and top it with another layer of sponge.
Refrigerate for 2 hours then demould.
Top it with some freshly whipped cream and strawberries.
