Sotong Masak Hitam | Malay Spicy Blackened Squid Ink Stir Fry

OPEN for ingredients! Low key inspired by Squid Game 😀 This is Spicy Blackened Squid, or Sotong Masak Hitam, a classic Malay dish that looks intimidating but is actually so easy to make! If you’ve always wanted to work with the squid black ink, i’m going to demystify it for you in this video so let’s do this.



  • 350g or about 4 Squids
  • 100ml or about 4 tbsps Dried Chilli Paste*
  • 50g or 1 medium Onion
  • 10g or 1 tsp Ginger, grated
  • 10g or 1 tsp Garlic, minced
  • 1 Lemongrass, bruised
  • 4-5 Kaffir Lime Leaves (optional)

  • 1/2 Cup Water
  • 1 tsp Salt, or to taste
  • 1 tsp Sugar, or to taste (optional)

*use 2 tbsps for a low to medium spice.
