Instead of chocolate and graham crackers from the store, Sam bakes up her very own chocolate cinnamon graham crackers from scratch. 1/2 cup Dutch-process cocoa powder
1/4 cup wheat bran
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
3/4 cup unsalted butter (1 1/2 sticks, 170 grams, or 12 tablespoons), at room temperature
1/2 cup dark brown sugar
3 tablespoons granulated sugar
2 tablespoons molasses
2 tablespoons honey or maple syrup
12 marshmallows, for serving
