Simple Almond Flour Cake

Almond flour cake is moist, fragrant with vanilla. You can justify eating it for breakfast with a cup of coffee or serve it with seasonal fruit or frosting. Ingredients

  • 4 large eggs room temperature
  • 1/3 cup maple syrup (100g) or any liquid sweetener
  • 1/3 cup melted butter (80g)
  • 1 tsp vanilla extract
  • 2 cups almond flour (192g)
  • 1/2 cup cornstarch (60g)

  • 2 tsp baking powder
  • 1/2 tsp finely ground salt

for the topping (optional)

  • Almond flakes
  • Powdered sugar
  • Frosting

Instructions

  • In a bowl add the eggs and syrup, salt, vanilla and beat until smooth and fluffy, about 1 minute. Add melted butter (lightly cooled) and continue mixing until combined.
  • In a separate bowl mix together almond flour and cornstarch, baking powder. Whisk well to combine.

  • Add dry ingredients to the wet ingredients and then mix until no lumps remain. Let the batter sit for 10-15 minutes.
  • Meanwhile, preheat the oven to 350 F (175 C). Once the oven is heated, prepare a cake pan (7inch – 8inch): grease with oil or line with parchment paper and then pour the batter to the pan.
  • Bake the cake for 40-50 minutes or until a toothpick comes out clean. Let the cake cool for 10-15 minutes before removing it from the pan.
  • Dust with powdered sugar or top the cake with the frosting.
