Sheet Pan BBQ Chicken and Roasted Veggies

This Sheet Pan BBQ Chicken and Roasted Veggies is a great idea for an easy quick dinner. This flavorful BBQ chicken is coated in a honey, chili and BBQ sauce and baked until tender alongside some perfectly roasted veggies like potatoes and broccoli.

Makes about 4-6 servings

For the chicken
4 medium boneless skinless chicken breasts or thighs
1 tsp smoked paprika
salt and freshly ground black pepper
BBQ Honey Sauce
1/4 cup (60g) barbecue sauce
2 tbsp (45g) honey
1 tbsp (15g) hot chili sauce (sriracha)

For the Potatoes
1 pound (450g) sweet potatoes
1 pound (450g) potatoes
2 tbsp olive oil
1/2 tsp (1g) garlic powder
1 1/2 tbsp (12g) breadcrumbs
1/4 cup (25g) Parmesan Cheese
salt
freshly ground black pepper
mixed dried herbs (oregano, basil, thyme)

2 small heads broccoli (300g each)
1 tbsp olive oil
salt and freshly ground black pepper
