Prawn crackers with homemade sweet and sour sauce

Oil for frying

For the sauce
15g (2 tbsp) of corn starch
30ml (2 tbsp) of water
75g (1/4 cup) of sugar
60ml (4 tbsp) of water
60ml (4 tbsp) of white vinegar
70g (1/4 cup) of ketchup

1. Add the dragon clouds into the deep hot oil and fry until they open up.
2. In a small bowl with corn starch add the water and mix.
3. In a saucepan add the sugar, water, white vinegar, salt, and ketchup, and mix. Add the cornstarch mixed with water and cook until thick and slightly sticky.
4. Serve the crackers with sauce.
