Pompano Escabeche

Pompano Escabeche is a popular dish in Philippines and common dish in families gathering together. Pompano escabeche is a scrumptious dish where pompano is marinated and fried in oil and further cooked in mixture of onion tomato and other spices. Follow this Pompano Escabeche to make a special dish for your family memebers

Gawin mu ito sa pompano at sigurado uulit ulitin mu.
1 pompano (cleaned)
1 quartered onion
2 cloves minced garlic
Finely sliced carrot
1 finely sliced bell pepper
1 tsbp soy sauce
3 tbsp vinegar
3 tbsp water
2 tbsp brown sugar
Salt & pepper to taste

1. Prepare your pompano, make a slit. Switch angle to create a design.
2. Season fish with salt and pepper.
3. Dredge in cornstarch and shake off excess starch.
4. Pan fry fish until golden, set aside.
5. In a pan, saute onion, ginger, and garlic.
6. Stir fry carrot and bell pepper.
7. Add soy sauce, vinegar, slurry and water then stir.
7. Next, add brown sugar and season with pepper and salt. Stir.
8. When sauce is thick but still runny, turn off fire.
9. Pour sauce all over fried fish.
10. Serve and enjoy!
