Polish «Zupa Ogórkowa» – CREAMY PICKLE SOUP. Recipe by Always Yummy!

Here is a classic Polish recipe that had been enjoyed for generations. The distinguish ingredient of this soup is pickled cucumber, and sour cream or cream required. Taste of Polish soup with pickled cucumber is unlike any other and there is a strong possibility that you’ll want to cook it time and again.

✅ Ingredients:
• chicken – 14 oz / 400 g
• potato – 12 oz / 350 g
• pickled cucumber – 12 oz / 350 g
• pickle – 7 fl oz / 200 ml
• carrot – 5 oz / 150 g
• onion – 4 oz / 120 g
• sour cream 20% – 6 oz / 180 g
• fresh parsley – to taste
• vegetable oil – 1 tbsp
• water – 2,6 qt / 2,5 l
• butter – ⅓ oz / 10 g
• ground black pepper – ½ tsp
• salt – 1 tsp

✔︎ You will need:
• stockpot ≥ 4,7 qt / 4,5 l
• carving board
• grater
• bowl

📙 Preparation:
1. Cut the potato, carrot and onion into small dices, grate the pickled cucumber coarsely.
2. Pour the chicken with cold water and bring to a boil over high heat, drain and rinse. Pour again with 2,6 qt / 2,5 l of cold water, bring to a boil, skim the froth and cover with a lid, cook for 20 minutes over low heat.
3. Heat a pan with the vegetable oil and butter, add the onion and fry over medium heat for 2 minutes, then add the carrot and fry for another 2 minutes over medium heat.
4. Add the grated cucumber into the pan and simmer over low heat for 10 minutes.
5. Add the potato into the stockpot with the broth and cook for 10 minutes over low heat.
6. Add the veggies out of the pan into the soup, stir, bring to a boil and cook for 10 minutes over low heat.
7. Take the chicken out of the stockpot into a bowl, separate the meat from bones and cut into pieces.
8. Add the chicken, pickle, ground black pepper, salt to taste and sour cream to the soup, bring to a boil and switch the heat off.
9. Serve the Polish pickle soup hot having sprinkled with fresh parsley.
1. Sour cream can be replaced for fat cream.
2. If your pickled cucumber turns out to be sour, then its pickle can be not added to a soup or added to taste.
