Sour Spice Mix
3 tablespoons (21 grams) amchoor powder (mango powder)
1 1/2 tablespoons (12 grams) sumac
2 teaspoons garam masala
2 teaspoons fine sea salt
2 teaspoons ground white pepper
1 teaspoon red pepper flakes (optional)
3/4 teaspoon garlic powder
1/2 teaspoon light brown sugar

Chicken Wings
12 chicken drumettes
1/2 teaspoon fine sea salt
1 1/4 teaspoons freshly ground black pepper, divided
1/2 large egg, beaten (save the rest in the freezer and use for egg wash)
3 garlic cloves, smashed
3/4 cup small white sago (tapioca) pearls
1/2 cup white distilled vinegar or Chinese white rice vinegar
Canola oil, for frying
