Lemon Cheesecake

Lemon flavored cheesecake on a vanilla wafer crust with a tart lemon curd topping. This cheesecake recipe is perfect for all lemon lovers.

For the crust
2 cups ( 200 g) Vanilla Wafer crumbs
¼ cup (50 g) granulated sugar
5 tablespoons unsalted butter, melted

For the cheesecake
1 ⅓ cups (267 g) granulated sugar
2 tablespoons lemon zest, from about 2 lemons
32 ounces (908 g) cream cheese, softened
¾ cup (170 g) sour cream, room temperature
¼ cup (60 ml) fresh lemon juice, about 2 large lemons
1 tablespoon vanilla extract
4 large eggs, room temperature, lightly beaten


For the topping
1 large egg
1 large egg yolk
½ tablespoon lemon zest, about 1 lemon
⅓ cup (80 ml) fresh lemon juice, from about 2 lemons
½ cup (100 g) granulated sugar
1 teaspoon cornstarch
1 tablespoon unsalted butter
whipped cream for garnish
lemon slices for garnish
