Kardea levels up a classic, saucy Hot Brown Sandwich by swapping out its usual deli meat for roasted turkey tenderloins, coated in her very own house seasoning!

Hot Brown Sandwiches

Ingredients

12 ounces turkey breast tenderloins (or use a boneless, skinless turkey breast)
1 tablespoon olive oil
1 tablespoon Miss Brown’s House Seasoning, recipe follows
Nonstick cooking spray, for the baking pan
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups half-and-half
1/2 cup grated Pecorino-Romano
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon freshly ground nutmeg
4 slices Texas toast, toasted
1 large ripe tomato, sliced
4 slices thick-cut bacon, cooked until crisp
Chopped fresh flat-leaf parsley, for garnish

Miss Brown’s House Seasoning:

1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Directions

Preheat the oven to 425 degrees F.

Rub the turkey tenderloins with the oil and sprinkle evenly with the House Seasoning. Place in a shallow baking pan coated with cooking spray and bake until a meat thermometer registers 160 degrees F, about 20 minutes. Remove from the oven and let rest 5 minutes, then thinly slice.

Meanwhile, make the cheese sauce: Melt the butter in a small saucepan over medium-high heat. Add the flour and cook until foamy, about 1 minute. Slowly add the half-and-half and cook, whisking constantly, until the sauce thickens, about 5 minutes. Whisk in 1/4 cup cheese, along with the salt, pepper and nutmeg.

Switch the oven to broil. Arrange the toast slices on a lightly greased aluminum foil-lined rimmed baking sheet. Top evenly with the sliced turkey, tomato slices and cheese sauce. Sprinkle with the remaining 1/4 cup cheese.

Broil until the tops are browned and bubbly, 2 to 3 minutes. Remove from the oven and transfer to serving plates. Top with the bacon and sprinkle with parsley before serving.

Miss Brown’s House Seasoning:
Yield: 5 teaspoons

Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.
