Just Add Tomatoes and Eggs for a Mind-Blowing Breakfast!
Hi Guys! This is a quick and simple egg recipe if you want to switch out your morning routine for something delicious and different. I love tomato and basil anything, and thought it would be so good with eggs and guess what… it did not dissapoint. Try this out and let me know what you think!
Tomato Basil Scrambled Eggs Recipe:
1/4 cup cherry tomatoes, sliced
1 garlic clove
3 eggs, cracked and whisked
2 tablespoons mozzarella cheese
1 tablespoon balsamic vinegar
5-7 basil leaves.
In a bowl, whisk the egg with a garlic clove and some salt and pepper to taste.
In a saute pan, on medium heat add some olive oil and cherry tomatoes. pan roast it for 3-5 minubes with balsamic vinegar until it’s soft and roasty. Remove and clean the pan.
In the pan, add a little more olive oil and pour in the eggs. Let it set for a few seconds and scrape the pan to scramble the eggs. Keep doing this until it’s mostly cooked but still creamy. Turn off the heat and then add the tomatoes, mozzarella and basil. Mix and then pour onto a plate. Serve with toast and enjoy!
