Italian stuffed fritters (crispelle): crunchy and quick to prepare!

700ml (3 1/2 cups) of water (lukewarm)
9g (2 tsp) of sugar
20g of fresh yeast
940g (8 cups) of flour
20g (1 tbsp) of salt
Oil for frying

1. In a bowl add the water, sugar, yeast, and flour and mix with the help of the wooden spoon to obtain no lumps of batter. Add the salt and continue mixing to combine all together well. Cover with cling film and let it rise for 2 hours.
2. After time has elapsed take the batter with your hands (with the help of gloves) and flatten it a bit. Stuff half with the salad and the other half with the ricotta.
3. Transfer them to the pot with hot oil and fry until they are golden brown.
