Italian gingerbread: without eggs or milk! Panpepato recipe! How to make an unforgettable memory

That smell of Italian gingerbread: Panpepato, is the kind of childhood memory that marks your mind. In my family we used to change a few spices every different Christmas (to vary the pleasures). There are several recipes, but this is by far my favorite. But it is good to know that you can add candied fruit, add spices like cloves, ginger, star anise and etc … It is soft on the inside thanks to a short cooking. Good tasting !


Ingredients :
50 g of hazelnuts (1/3 cup)
50 g almonds (1/3 cup)
50 g walnut (1/3 cup)
100 g dark chocolate, chopped
80 g of date syrup or maple syrup (I don’t cook honey anymore) – 1/4 cup
2 tablespoons of water
1 teaspoon of cinnamon
Some nutmeg
Zest of a clementine or an orange
1 pinch of pepper
50 g raisins (1/3 cup)
100 g of quality plain flour (½ cup + 2 tbsp)
