How to make Marble chocolate madeleines / Valentine’s Day Gift


This time is a Valentine’s Day gift project.
It is a marble chocolate madeleine.
The appearance is artistic, impactful and beautiful, and the taste is very delicious.

[Ingredients] For 6-8 madeleine molds
A – Flour: 35g
A – Baking powder: 2g
A – Whole egg: 1 (55-58g)
Granulated sugar: 35g
Honey: 10g
Syrup: 10g (honey is fine)
Almond powder: 18g
Unsalted butter: 50g

  2. Soften the butter to a creamy consistency, coat the mold, and refrigerate until ready to use.
  3. Crack whole eggs into a bowl and mix with granul ated sugar (56g of whole eggs in the video).
    Mix in the honey and syrup.
    Mix in the almond powder.
    Mix in the sifted flour.
    Melt the butter and mix it in.
    Cover with plastic wrap and refrigerate the dough for about 3 hours.
    Remove the dough from the refrigerator and let it sit at room temperature for about 30 minutes.
    Remove the mold from the refrigerator and squeeze out the dough.
    Bake in a preheated oven at 180°C for 15 minutes.
    Rotate the dough while watching the browning.

[Chocolate coating]
White chocolate
Chocolate pen (black)

  1. Melt the chocolate pen in hot water at around 50℃.
  2. Temper the white chocolate and keep it warm as much as possible (I melted it at 45℃, lowered the temperature to 25℃ and raised it to 28℃)
  3. Heat the mold with a hair dryer or heat gun to prevent the chocolate from hardening too quickly.
    Pour in the white chocolate, add a moderate amount of chocolate pen, and draw a marble pattern with a skewer.
    Harden in the refrigerator to finish.
