This loaf will make ten slices of bread.

• 3½ cups (497g/18oz) of All-Purpose Flour/Plain Flour.
• 1 tsp Salt.
• 1 tsp Baking Soda/Bicarbonate of Soda.
• 1 tsp Caster Sugar (optional).

• Oven: 230°C/460°F.
• Gas Mark 8.
2. Use a medium-sized bowl to mix the flour, salt, sugar and baking soda.
3. Make a well in the centre of the dry ingredients and pour in ¾’s of the buttermilk, add the remaining buttermilk if the dough is too dry.
4. Using your open hand or a spoon, mix the flour and buttermilk mixture gently together until it becomes a loose dough.
5. The dough should be soft, but not too sticky, if it’s sticky add a little extra flour.
6. Turn onto a floured work surface and work the dough gently to bring it together into a round shape with a depth of 1½ inches/4 cm.
7. Place on a lightly greased baking sheet or line the baking sheet with parchment paper.
8. Score the bread with a sharp knife by making a deep cross on top and poking a hole in the four corners of the bread.
9. Bake for 15 minutes at 230°C/210°C Fan (460°F/420°F Fan), then turn down the oven to 200°C/180°C Fan (400°F/360°F Fan) and bake for 30 minutes more.
10. When done, the loaf will sound slightly hollow when tapped on the bottom.
11. Remove from the baking sheet and place on a wire rack to cool. Best eaten fresh the same day.
12. Mmm Scrummy!!!
