*TIMINGS*

• Cook Time: 15 mins.
• Total Time: 30 mins.

*SERVINGS*
• Makes 8 Scones.

*INGREDIENTS.*
• 3 cups + 2 tbsp (500g/17½ oz) Self Raising Flour (plus extra for dusting).
• 1 tsp of Baking Powder.
• ½ cup + 3 tbsp (150g/5oz) Unsalted Butter (frozen and grated).
• ½ cup (100g/3½oz) Caster Sugar.
• 1 cup (200g/7oz) Mincemeat

• 1 Egg, Medium.
• ½ cup + 1 tbsp (130ml/4.5 fl oz) Buttermilk.
• Flaked Almonds (optional).
• Icing Sugar (optional).
• Brandy Butter

*OVEN TEMPERATURES*
Preheat the oven:
• Fan Oven: 200°C/400°F.
• Oven: 220°C/440°F.
• Gas Mark 7.

*METHOD.*
1. Preheat the oven to the above temperatures and place a lined baking tray in the oven.
2. Place the self-raising flour and baking powder in a large bowl and give everything a mix.
3. Using a cheese grater, grate frozen butter into the dry ingredients and rub the butter into the flour until it resembles coarse breadcrumbs.
4. Pour in the sugar and mix.
5. Add the mincemeat and using a fork break it up while mixing so that it’s evenly combined.
6. Mix the egg and buttermilk together and pour them into the dry ingredients.
7. Hold back 1 tbsp in the jug to glaze the scones before baking.
8. Using a fork or your hands stir until the mixture comes together and forms a ball.
9. Place the dough on a floured work surface and fold the dough a few times while shaping at the same time.
10. Pat down the dough or use a rolling pin to roll to a thickness of 4cm.
11. Using a 7cm round cutter, dip it in flour and cut out the scones.
12. Remove the warm tray from the oven and place the scones on it.
13. Brush the tops of the scones with the buttermilk mixture making sure not to let it drip down the sides of the scones as this will affect the scone rising while baking.
14. Scatter some sliced almonds on top of the scones and press them down slightly so they stick.
15. Bake in a preheated oven for 15 minutes or until golden brown.
16. Remove from the oven and allow to cool on a wire rack.
17. Sprinkle with icing sugar and serve warm with brandy butter.
18. Mmm Scrummy!!!

*STORAGE.*
• Scones can be frozen for 2 to 3 months.
• Store in an airtight container at room temperature for 3 to 4 days.
• Place in the microwave or in the oven to reheat.
