How to make a Rhubarb Tarte

Rhubarb Tarte with Homemade Pastry Recipe

Timings:

Ingredients:

For the Pastry:

  • 250 grams (8.8 ounces, 2 US cups) of all-purpose flour.
  • 30 grams (1 ounce, 0.15 US cups) of granulated sugar.
  • 30 ml (1 ounce, 0.13 US cups) of cold water.
  • 1 medium-sized egg. (keep some for the egg wash)
  • A pinch of salt.

For the Filling:

  • 400 grams (14 ounces, 1¾ US cups) of fresh rhubarb, chopped.
  • 100 grams (3.5 ounces, 0.5 US cup) granulated sugar.
  • 1 tablespoon (0.5 ounces, 0.06 US cups) butter.
  • 1 teaspoon of corn flour.

Oven Temperatures:
Preheat the oven:

  • Fan Oven: 180°C/360°F.
  • Oven: 200°C/400°F.
  • Gas Mark 6.

Method:

  1. Preheat oven to 180°C (360°F).
  2. In a bowl, mix flour, sugar, and salt. Add the egg and mix until combined.
  3. Gradually add cold water, mixing until a dough forms.
  4. Roll out the dough on a floured surface and fit it into a tart pan.
  5. Chill the pastry in a fridge for 30 mins
  6. In another bowl, mix rhubarb and sugar.
  7. Grease an oven-proof plate with butter
  8. Roll out the pastry and place it on the plate.
  9. Cut the excess pastry away with a knife.
  10. Sprinkle the pastry with cornflour to prevent a soggy bottom.
  11. Pour the rhubarb mixture into the pastry crust.
  12. Roll another layer of pastry for the lid of the tarte.
  13. Wrap the pastry around your rolling pin to make it easy to handle.
  14. Place the pastry lid on top of the filling.
  15. Squeeze the edges with your finger and thumb to seal the tarte.
  16. Feel free to decorate the lid with extra pastry.
  17. Brush egg wash over the pastry lid.
  18. Cut steam slits into the top of the pasty.
  19. Bake for 40 minutes or until the pastry is golden and the filling is set.
  20. Allow to cool before serving.

Storage:

  • Store in an airtight container in the fridge for up to 3 days.
  • The tart can be kept frozen for up to 4 months.
  • Defrost completely, reheat thoroughly before serving.
