How to cook Chicken Yassa I Senegalese Gambian inspired Yassa au Poulet chicken & onion sauce

INGREDIENTS:

* 12 chicken drums
* Marinate chicken with 4 cloves of garlic and 1 tsp salt paste, 1 tbsp Dijon mustard, 2 tbsp distilled vinegar, 4 tbsp cooking olive oil, juice of 1/2 lemon, 1 tsp herb and spice mix – mix equal amounts of your favorite herbs and black pepper, then take a tsp of it for recipe, 1 scotch bonnet chili, 1/2 tsp vegetable bouillon
* 4 large sweet onions sliced thinly
* 3-4 tbsp oil for searing chicken.
* 10 green pitted olives
* Chopped parsley for garnish
* Optional chili for garnish
*** for best results, marinate overnight***
*** total cooking time is 40 mins ***
