How To Bake FLUFFY LEMON CAKE || Homemade Lemon Cake #74 Recipe by Always Yummy!

Thanks to its light flavored taste and tender pastry a lemon drizzle cake can be called perfect. Everyone will cope with cooking of lemon cake. Baking a lemon cake for birthday or family dinner or just while busy in your kitchen on Sundays you will cook it with little effort. Such a cake will always be to a point and your people delighted.

• 4 eggs
• all-purpose flour – 8 oz / 220 g
• butter – 8 oz / 220 g
• lemon pulp – 1,5 oz / 40 g
• lemon juice – 5 tbsp
• sugar – 1 cup / 200 g
• baking powder – 1 tsp
• vanillin –1/2 tsp
• powdered sugar – 5 oz / 150 g
• vegetable oil – 1 tsp

You will need:
• oven
• baking dish 9*5*2 in / 24*13,5*6 cm
• parchment paper
• deep bowl
• mixer or whisk

1. Beat the butter of room temperature with mixer for about a minute, add 5,5 oz / 160 g of sugar and beat for another 3 minutes at low speed.
2. Beat 4 eggs with a fork in a bowl and add the mass into the butter with sugar, gradually by 7-8 parts, constantly beating at low speed.
3. Add the sieved flour, baking powder, vanillin and knead the dough with a spoon, no need to mix long.
4. Mix 1,5 oz / 40 g of lemon pulp and sugar each in a small bowl, add to the pastry and mix neatly.
5. Cover the baking dish with a sheet of parchment paper, sides as well, and lay out the pastry into the dish, make it even and make a line across with a knife wetted in vegetable oil.
6. Preheat oven to 350°F / 180°C and bake the cake for 7 minutes, then reduce the heat to 320°F / 160°C and bake for 45-50 minutes more.
7. Take the cake out of the oven and cool it.
8. Add 5 tbsp of lemon juice into the powdered sugar and stir well until smooth sugar glaze.
9. Free the cooled cake from the baking dish and culinary paper, spoon it with the glaze and decorate the middle with sugar dessert sprinkles or nuts.


1. Use a low speed mode of a mixer to have not butter clotted.

3. Cover a cold cake with a glaze, if hot a glaze will melt.
