Moroccan Couscous is awesome, and I’ve been missing out on it for so long. I had no idea that perfectly cooked couscous was so good, and that explains why Moroccans eat it every week. This Couscous has 7 vegetables and tender meat cooked in a warmly spiced broth.
Broth:
2 Tbsp olive oil
1.5kg Lamb Neck
2 Onions 450g
3 Grated Tomatoes 270g
2 Tsp Pepper
2 Tsp Ginger
2 Tsp turmeric
4 Tsp Salt
15g Coriander
15g Parsley
Small Pinch of saffron
400g can of chickpeas
Vegetables (Use whatever amounts you like of each of these):
White Cabbage
Pumpkin
Carrots
Sweet Potato
Turnip
Courgette
Red Chilli
Couscous:
2 Tbsp Olive oil
500g Couscous
550ml water
1.5 Tsp salt
30g Butter or Smen
