HOMEMADE CRACKERS RECIPE
(Makes 16 crackers)
1 cup chickpea hummus (homemade or store-bought) (240g)
1 cup ground oats or oat flour (100g)
NUTRITIONAL INFO (per cracker):
48 calories, fat 1.9g, carb 6.2g, protein 2g
In a large bowl, add the ground oats and your hummus.
Mix everything together until it gets sticky and the dough starts to form.
Place the dough between two sheets of parchment paper and roll it out to about 5mm thick.
Using a cookie cutter cut into individual crackers and line on a baking sheet.
If you want, sprinkle with some sesame seeds, flax seeds and salt, but that’s optional.
Bake at 325F (160C) for 20-25 minutes.
Serve with your favorite dippers.
1 large cucumber
1 cup Greek yogurt
1/2 clove garlic, minced
2+1 tbsp white wine vinegar
3 tbsp olive oil
1 tbsp fresh dill, finely chopped
salt and black pepper, to taste
-Peel and grate the cucumber, sprinkle with some salt and 1 tbsp white wine vinegar, mix and set aside for 10 minutes.
-Squeeze out as much excess liquid as possible and combine the cucumbers with other ingredients.
