HEALTHY OATMEAL COOKIES. Peanut Butter Oatmeal Raisin Cookies are easy grain and refined sugar free cookies.

Ingredients
1 cup (240 g) natural peanut butter
1/2 cup (170 g) honey or maple syrup
1 large egg
1/2 teaspoon baking soda, sifted
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup (80 g) quick oats or rolled oats (for a chewier texture)
1/3 cup raisins or nuts or chocolate chips
Instructions
Preheat the oven to 350 degrees F (175 C) and line a baking sheet with parchment paper.
Place the peanut butter, maple syrup, egg, baking soda and vanilla in a medium bowl and beat on medium speed with a hand mixer until combined.
Stir in the quick oats and dark chocolate chips.
Scoop the cookie batter (about a heaping tablespoon of batter) and place on the prepared baking sheet about an inch and a half apart.
Bake for 10 – 13 minutes or until lightly golden brown, then remove from heat and place on a wire rack to cool.

Although US volume measurements have been included for your convenience, it is highly encouraged that you weigh your ingredients using a kitchen scale to get the best possible results. Due to the sensitive nature of baking, kitchen scales are proven to yield more accurate and consistent results than measuring cups. Enjoy!
