NUTELLA COOKIES RECIPE
(makes 10 cookies)
1 cup homemade Nutella (or any healthier chocolate spread) (280g)
1 cup ground oats or oat flour (100g)
1 cup roasted hazelnuts (130g)
1/4 cup pitted dates or date paste (75g)
1/4 cup dark chocolate chips (50g)
1 tbsp unsweetened cocoa powder
1 tbsp maple syrup or honey
2-3 tbsp coconut cream, coconut milk or heavy-whipping cream

First make your homemade nutella, in a food processor add the roasted hazelnuts and blend until the oils from the nuts start to release.
Now, add the dates, melted dark chocolate, cocoa powder, maple syrup and coconut cream. Process until it’s smooth to your liking.
In a medium sized bowl, add homemade nutella (measure 1 cup, there will be some left, use this for decoration), also add the egg and mix with the spatula until the egg is incorporated.
Gradually add the oats, and gently mix it in, until the dough is formed.
Let it chill in the fridge for 20 minutes, or if it doesn’t stick start rolling the balls.
Roll with your hands, you’ll end up with 10 equal balls, transfer the balls on a lined baking tray.
Using your spatula or bottom of your glass, press each ball down slightly, to flatten the cookies.
Make a well in the center of each cookie, using your finger.
Bake cookies at 350F (180C) for 8-10 minutes.
Let it cool in a tray for 5 minutes, then transfer to a cooling rack.
When completely cool, decorate with leftover homemade nutella, or your favorite fruit jam.
