Healthy Banana Bread | Made with Oat flour & Peanut butter

The BEST healthy peanut butter banana bread that packed with protein and peanut butter flavor, naturally sweetened with pure maple syrup, dairy free and a great healthy breakfast or snack. Try with mini chocolate chips

For 1 Loaf OR 12 regular Muffins

Ingredients

  • 3 medium ripe bananas (300 g)
  • 1 t ablespoon fresh lemon juice

  • 3/4 cup (180 g) natural peanut butter (just peanuts and salt)
  • 2 medium eggs
  • 1/4cup (75 g) pure maple syrup
  • 2 teaspoons vanilla extract
  • 1/2 tablespoon milk of choice (I used oat milk)
  • 1 1/2 cup (150 g) oat flour, don’t pack!! (you can make your own – just blend until smooth)
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup mini chocolate chips (raisins, nuts or seeds)

Instructions

  1. Preheat oven to 350 degrees F (180 C). Line a 9 x 5 inch pan with parchment paper.
  2. In a large bowl mix together the mash banana with lemon juice, add eggs, maple syrup, peanut butter and vanilla extract to a bowl until well combined.
  3. In a large bowl, whisk together the dry ingredients: oat flour, baking powder, cinnamon and salt. Add dry ingredients to wet ingredients and mix until just combined.

  5. At this point you can fold in an of the following: 1/3 cup chopped nuts or 1/3 cup chocolate chips (or both!).
  6. Add banana bread batter into prepared pan. Bake for 50-60 minutes or until a toothpick comes out clean or with just a few crumbs attached. Allow bread to cool in the pan for 10 minutes, then remove and transfer to a wire rack to finish cooling.
