Halal Bak Kwa Recipe | salty sweet chinese jerky but with beef and chicken

Today I’m making Bak Kwa, or Chinese style meat jerky, but with beef and chicken instead of the more traditional pork. This roasted meaty snack gets addictive and inspires long queues whenever Chinese New Year rolls around.

I have two recipes here, and they’re both interchangeable for any meat you fancy.

Ingredients:

Beef Bak Kwa

  • 400 gr beef mince
  • 20 grams brown sugar
  • 20 grams white sugar
  • 2 tbsps Light Soy Sauce
  • 1 tsp Fish Sauce
  • 1 tsp Dark Sweet Soy Sauce or Kicap Manis
  • 1 tsp Sesame Oil
  • 1 tsp Rice Vinegar
  • 1 tsp Chinese five spice powder
  • 1 tsp of White Pepper
  • 1 tsp of chilli powder or cayenne powder (optional)

Chicken Bak Kwa:

  • 250 chicken mince
  • 2 tbsps or 30 grams Sugar
  • 1 tbsp light Soy Sauce
  • 1 tsp oyster sauce
  • 1/2 tsp sesame oil
  • 1/2 tsp fish sauce
  • 1/2 tsp five spice powder
  • 1/2 tsp white pepper

Honey Water Glaze:

  • 2 tbsps Honey
  • 2 tbsps Water
