Funfetti Cupcakes Recipe

SERVINGS.
The recipe will make 12 cupcakes.

INGREDIENTS.

For the Funfetti cupcakes:
• ½ cup + 3 tbsp (150g/5oz) Butter (room temperature).
• ¾ cup + 3 tbsp (150g/5oz) Self-Raising Flour.
• ¼ tsp Baking Soda/ Bicarbonate of Soda.
• ½ tsp Vanilla Extract.
• 1 tbsp Milk.
• 3 Medium Eggs.
• ½ cup + 2 tbsp (125g/4.5oz) Caster Sugar.
• 2½ tbsp (25g/1oz) Funfetti Sprinkles.

For the buttercream frosting:
• ¾ cup + 2 tbsp (200g/7oz) Butter (room temperature).
• 2¾ cup (400g/14oz) Icing Sugar/Powdered Sugar.
• ½ tsp Vanilla Extract.
• 1-2 tbsp Milk/Warm Water.
• Yellow Gel Food Colouring (optional).

For the decorations:
• Silver Edible Glitter (optional).
• Funfetti Sprinkles.

METHOD.

To make the Funfetti cupcakes:
1. Preheat the oven:
Fan Oven: 160°C/320°F.
Oven: 180°C/355°F.
Gas Mark 4.
2. Line a cupcake tin with 12 cupcake cases.
3. Mix together the room temperature butter, self-raising flour, baking soda, eggs, vanilla extract, caster sugar and milk until smooth, taking care not to overmix.
4. Fold in the sprinkles and make sure they’re evenly dispersed.
5. Spoon the mixture into the cupcake cases.
6. Bake in a preheated oven for 18-20 minutes. When baked, allow cooling on a wire rack.

To make the buttercream frosting:
1. Beat the room temperature butter until smooth and white in colour – this can take about 4 minutes.
2. Add in the icing sugar a couple of tablespoons at a time, making sure the icing sugar is fully incorporated before adding more and mixing again. Repeat this process until all the icing sugar/powdered sugar is mixed in.
3. When all the icing sugar is thoroughly mixed in, scrape down the sides of the bowl.
4. Add the vanilla extract, 1 tablespoon of milk/warm water and gel food colouring.
5. Mix for about 3 minutes until thoroughly combined. Add extra milk/water to the buttercream until you reach your desired consistency.

To decorate the cupcakes:
1. Slather the buttercream on the cupcakes using a spoon or pipe a swirl on top. I use an 8B Wilton tip to create a nice swirl.
2. Finish off with edible glitter if using and lots of Funfetti Sprinkles.

STORAGE.
• Store for up to 3 to 4 days in an airtight container at room temperature.
• Freeze for up to 3 months
