Easy Thai Cashew Chicken Stir Fry

Today we’re making Thai Cashew Chicken Stir-fry… but super easy with a couple of cheat ingredients. This is a saucy, tangy, sweet stir-fry with an addictive crunch of cashew nuts.

Typically raw cashew nuts are used, but I much prefer using roasted, salted cashews… so I can also snack on them.


  • 300 grams Chicken
    • Marinated with:
    • 1 tsp Light Soy Sauce
    • 1/2 tsp White Pepper
    • 1 tsp Cornstarch
  • 40 grams Cashews
  • 4-5 stalks of Dried Chillies
  • 1/2 an Onion
  • 1-2 Garlic Cloves
  • 1 tbsp Sesame Oil
  • Seasoning Sauce:
    • 4 tbsps Tomato Sauce
    • 2 tbsps Chilli Sauce
    • 1 tbsp Light Soy Sauce
    • 3-4 tbsps Water
    • 1 tsp Cornstarch
    • 3 tsps Sugar
