Easy Oven Whole Roasted Chicken

Makes about 4-6 servings

4 pounds (1.9kg) whole chicken
2 tsp (10g) salt
1/2 tsp (2g) sweet or smoked paprika
1/2 tsp (1g) freshly ground pepper
1 1/2 tsp (5g) garlic powder
2 tsp mixed dried herbs (oregano, thyme, rosemary)
2 1/2 tbsp (35g) olive oil


For stuffing
1 lemon, cut in quarters
2 rosemary sprigs
Fresh thyme

For Roasted Vegetables
2 pounds (900g) red potatoes, cut into wedges
1 pound (450g) sweet potato, cut into wedges
1 fennel bulb, sliced ½ inch (1cm) thick
1/2 tsp (3g) salt
1/4 tsp freshly ground black pepper
1/2 tsp (2g) caraway powder
1 1/2 tbsp (20g) olive oil

For roasting
1 cup (240ml) hot water
