These Breakfast Tacos are a family favorite and so versatile. Fill them with eggs, cheese, and any of your favorite toppings like Chorizo or bacon! This Breakfast Taco recipe takes Taco Tuesday to a whole new level!

INGREDIENTS FOR BREAKFAST TACOS:

  • 8 Small Flour Tortillas (6” diameter), or corn tortillas for gluten-free
  • 12 oz Chorizo sausage (casings removed if present) or bacon
  • 8 large eggs
  • ¼ cup milk (skim or whole milk)

  • ¼ tsp fine sea salt
  • 2 Tbsp unsalted butter

TOPPINGS:

  • 1 cup shredded cheddar or Mexican cheese
  • 1 large Avocado, diced
  • 1 cup Pico de Gallo or diced fresh tomatoes
  • 1 cup Roasted Salsa (link to existing recipe), or added to taste
  • Hot Sauce, to taste
  • 2 jalapeños, sliced into rings or finely chopped
  • Cilantro to garnish
