Easy 1 cup Jamaican Rice & Peas

Hi Foodies,

When pressure cooking dry, unsoaked kidney beans in the instant pot the suggested ratio is usually
1 part beans – 3 1/2 parts liquid

So technically we would use 1/2 cup beans to 1 3/4 cup liquid. However, I’m adding rice afterwards so I add a bit extra liquid for that.

INGREDIENTS

1/2 cup dry red kidney beans (red peas not soaked)

3 1/2 cups water (added to instant pot)

Salt to taste

2 –  3 garlic cloves

3 tbsps thick Coconut CREAM

1 Tbsp Unsalted butter

4 – 5 sprigs thyme

2 stalks chopped scallion

5 allspice berries

1 or 2 scotch bonnet peppers

Salt to taste

1 cup basmati rice
