INGREDIENTS
8 russet potatoes, peeled and quartered
½ cup olive oil
⅓ cup unsalted butter
10 sage leaves
12 rosemary sprigs, de-stemmed
6 thyme sprigs, de-stemmed
1 whole egg plus 1 egg yolk, whisked
2 tablespoons sour cream
½ cup grated Parmesan
3 large garlic cloves, peeled and thinly sliced
Kosher salt
