Creamy & Cheesy BAKED SQUASH GRATIN. Easy Baked Squash CASSEROLE. Summertime Recipe by Always Yummy!

Squash casserole is a mouth-watering, light, with a creamy taste, delicious dish for a lunch or dinner and therewith low carb. Easy to cook!

Ingredients:
• squash – 2,2 lb / 1 kg
• onion – 3 oz / 100 g
• milk – 5 oz / 150 ml
• 1 egg
• cheese – 7 oz / 200 g
• garlic – 2 cloves
• ground nutmeg – ⅓ tsp
• vegetable oil – 2 tbsp
• fresh parsley – ½ oz /15 g
• breadcrumbs – 2 tbsp
• smoked paprika – ½ tsp
• ground black pepper – to taste
• salt – 2 tsp

You will need:
• oven
• baking dish Ø 8 in / 21 cm
• stockpot
• pan or saucepan
• cutting board
• food foil

Preparation:
1. Cut the squash into round slices 0,1 in / 3-4 mm thick, chop the onion and parsley leaves.
2. Preheat the oven to 350°F / 180°C.
3. In a small saucepan heat 1½ tbsp of vegetable oil, add the onion and fry until golden for 2-3 minutes over medium heat.
4. Add the minced garlic and fry for a minute over low heat stirring.
5. Then add the ground black pepper, smoked paprika, ground nutmeg, milk, 5 oz / 150 g of grated cheese, stir, bring to a boil, add the parsley, salt to taste and so soon as cheese is melted take off the heat and cool.
6. Bring 3 l of water to a boil, add 1½ tsp of salt and the squash, cook for 2 minutes over medium heat.
7. Take out into a colander and rinse with cold water.
8. Lay out on paper towels to dry out.
9. Add an egg into the cooled sauce and stir well.
10. Brush the baking dish with vegetable oil, lay out the squash into one layer, coat with the sauce, then add another layer of the squash and brush with the sauce, repeat.
11. Sprinkle the upper of casserole with 2 oz / 50 g of grated cheese and then breadcrumbs evenly.
12. Cover the baking dish with a food foil and bake for 35 minutes at 350°F / 180°C.
13. Remove the foil and bake for another 10 minutes.
14. Sprinkle the squash casserole with parsley. Serve it hot or cold.
