For the cake
5 large eggs, separated, room temperature
¼ teaspoon cream of tartar
1 cup (200 g) granulated sugar
½ cup (114 g) unsalted butter, softened
¼ cup (60 ml) canola oil
1 teaspoon coconut extract
1 teaspoon vanilla extract
2 ¼ cups (270 g) cake flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup (240 ml) canned coconut cream
¼ cup (60 ml) buttermilk, room temperature
1 cup (90 g) shredded sweetened coconut

For the frosting
1 ½ cups (340 g) unsalted butter, softened
5 cups (600 g) confectioners’ sugar, sifted
⅛ teaspoon salt
1 teaspoon coconut extract
3-6 tablespoons canned coconut cream
14-ounce (396 g) bag shredded sweetened coconut
