Chocolate crinkles cookies: soft and fragrant!

60g (½ cup) cocoa powder
175g (¾ cup) sugar
60g (¼ cup) melted butter
2 medium eggs
3g (1 tsp) vanilla powder
120g (1 cup) all-purpose flour
3g (1 tsp) baking powder
½ tsp instant coffee
a pinch of salt
Powdered sugar

1. In a medium bowl whisk together flour with salt and baking powder.
2. In another bowl combine butter, eggs, and vanilla with sugar using a hand mixer. Add instant coffee and cocoa powder, and mix to combine.
3. Combine together dry ingredients with the butter mixture until thick and smooth dough forms. Cover the bowl with plastic and let sit in the fridge for around 4 hours up to overnight.
4. Roll cookie dough into balls, dredge in powdered sugar and place onto a parchment-covered baking sheet. Bake for 10-12 minutes at 180°C/350°F.
