These muffins are a copycat recipe from Third Culture Bakery in Berkeley, CA! They’re super crispy on the outside and perfectly chewy on the inside. It’s a perfect combination of coconut flavor and rich brown sugar. These smell alone will have you drooling!

-2 Tbsp Melted Unsalted Butter
-1/2 Cup / 100G Brown Sugar
-3/4 Cup / 186mL Coconut Milk
-1 Egg
-1/2 Tsp Vanilla Extract
-1/2 Tsp Honey

Dry
-1 Cup / 160G Glutinous Rice Flour
-1 Tsp Baking Powder
-1/4 Tsp Salt

Toppings
-2 Tsp Black + White Sesame seeds

Bake at 350F / 177 C for 45 – 50 Mins
