Brown Butter Banana Bread Recipe.

INGREDIENTS:
For the Brown Butter Banana Bread:
• ¼ cup + 1 tbsp (75g/2½oz) Butter.
• ½ tsp Cinnamon.
• 3 Ripe Bananas (Mashed).
• ¾ cup (150g/5oz) Caster Sugar.
• 1 Egg (Medium sized).
• 1½ cup + 3 tbsp (200g//7oz) All Purpose/Plain Flour.
• ½ tsp Salt.
• 1 tsp Baking Soda/Bicarbonate of Soda.

For the Cinnamon Sugar:
• 1 tbsp Caster Sugar
• ½ tsp Cinnamon.

For the Decorations:
• 1 Banana, sliced down the centre.

METHOD:
1. Preheat the oven:
Fan Oven: 180°C/355°F.
Oven: 200°C/390°F.
Gas Mark 6.
2. In a non-stick pan melt the butter on medium heat and stir occasionally. It will start to foam up and turn a golden colour.
3. Remove from the heat and stir in the cinnamon.
4. Leave to cool for 2 to 3 minutes.
5. Add the mashed bananas to the brown butter and stir in.
6. Pour in the sugar and mix until thoroughly combined.
7. Beat the egg before adding it to the mixture and mixing in.
8. Add the plain flour, salt and baking soda and gently stir until all the flour has been thoroughly combined.
9. Pour into a lined 2Ib loaf tin.
10. Sprinkle it with cinnamon sugar and add the sliced banana.
11. Bake in a preheated oven for one hour, and use a skewer to check it’s fully cooked.
12. Cool on a wire rack for one hour before cutting.

• Store for up to 4 days in a suitable container at room temperature.
• Store for up to 1 week in the refrigerator. (3°C).
• Store for up to 3 months in a freezer. (-20°C).
