BLACK PEPPER CRAYFISH
Ingredients:
4 tbsp black pepper, freshly crushed
crayfish, scrubbed and cut in half
Β½ cup cornstarch
oil, for frying
ΒΌ cup butter
1 pc red chili seeded and chopped
1/2 pc onion, chopped
1 clove, garlic, minced
2-Β½ tbsp chinese cooking wine
1 tbsp oyster sauce
1 tbsp light soy sauce
ΒΌ cup water
1 tbsp palm sugar
ΒΌ cup fried garlic

Procedure:
1. Toast pepper until fragrant. Set aside. Dredge each crayfish in cornstarch and fry for 3-5 minutes. Set aside.
2. In a wok, melt butter, and saute chilies, onions. and garlic. Toss in crayfish followed by wine.
3. Add oyster sauce, soy sauce, water, and sugar. Simmer until thickened. Serve topped with fried garlic.
