3 Eggs whites
2.5 cups Almond flour
1/2 cup Caster sugar
1/2tsp Vanilla extract
1tsp Almond extract
1/4 cup Icing sugar
Preheat the oven to 165°C.
Separate egg whites into a bowl.
Beat the egg whites until stiff peaks forms.
Sift almond flour then mix it with sugar .
Add about 1/3 of almond flour mixture into the egg whites and fold it in gently with a spatula.
Now add vanilla extract and almond extract.
You can also use Amaretto liqueur 1tbsp if you wish instead of Almond extract.
Add the second third of almond flour mix to the egg whites and gently fold in again.
Mix the remaining flour and fold it in one last time.
Cookie dough should have thick paste like texture.
Scoop out mounds of cookie dough and roll them into icing sugar.
Round it out to a ball in your hands .
Place the cookies onto a baking sheet and bake for 25 minutes at 165°C.
