Al Rehman Biryani Recipe

AlRehman Biryani
This biryani has been so popular for the past some time.
After trying so many versions from the internet. This is what I’ve come up with to suit my taste.
So here’s the recipe. Let me know if you try.

Ingredients
1 kg Chicken
1/2 cup oil
5 medium potatoes
1 large onion sliced
1 small onion fried
3 medium tomatoes
1 tbsp ginger garlic paste
1 tsp black pepper corns
1 tsp cloves
3 black cardamoms
6 green cardamoms
1 tsp cumin seeds
3 star anise (badian)
2 cinnamon sticks
1 tsp crushed red chillies
1 tsp turmeric powder
1 tbsp red chillie powder
1 tbsp coriander powder
1/2 tsp maze and nutmeg crushed (jaifal javitri)
3 green chilies
8 dried plums (Alu Bukhara)
1 tbsp garam masala
1 tsp kewra water
1 kg Biryani Rice
1 tsp food colour
For rice, 1 bay leaf, 2 cardamoms, 1 tsp zeera and 3 tbsp salt

Method:
In a pan add oil and fry onions.
Add chicken and ginger garlic paste. Cook this for few minutes then add all spices except for garam masala, potatoes and 2 tomatoes. Mix them, add 2 cups water and cook on medium heat for 5 minutes to 7 minutes.
Add garam masala, 1 slice tomato, green chilies and coriander. Mix then add fried onion, kewra and food Color.

Wash and soak Rice for 1/2 an hour if Basmati and 2 hour if Sela rice.
Boil water for rice with salt, bay leaf, cumin seeds and green cardamoms.
Add rice when water comes to a boil. Take half rice out in 1 minute and add to the biryani masala. (The rice should be 1/4 cooked at this time)
In another 2 minutes drain all the rice and add to the masala. (The rice should be half way cooked at this time)
Add 2 tbsp oil, cover and cook on medium heat for 5 minutes then low heat for 20 minutes.
It is best served hot!
