BREAKFAST CAKE RECIPE
(makes 8 pieces)
Ingredients:
1 cup processed oats, or oat flour (100g)
1/2 cup spelt or whole wheat flour (65g)
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
3 smaller apples
1 tbsp lemon juice
1/3 cup Greek yogurt (85g)
1/4 cup maple syrup, honey or agave (60ml)
1/3 cup unsweetened applesauce (85g)
3 large eggs
2 tsp vanilla extract

Preparation:
Begin by preheating your oven to 350°F (180°C). Line an 8-inch springform pan with parchment paper for easy removal.
Peel and core the apples. Slice them in half, then score them with a knife all the way around and cut them into quarters. Toss the apple slices in lemon juice to prevent browning.
In a mixing bowl, combine the oat flour, spelt or whole wheat flour, baking powder, salt, and cinnamon.
In another bowl, whisk together the Greek yogurt, your preferred sweetener (maple syrup, agave, or honey), applesauce, and vanilla extract.
Mix in the large eggs one at a time, ensuring they are fully incorporated into the wet mixture.
Gradually add the dry ingredients into the wet mixture, stirring just until all the ingredients are fully incorporated.
Pour the batter into a lined baking pan, spreading it evenly with a spatula. Give the pan a gentle shake to ensure the batter is evenly distributed. Now, spread the apple quarters evenly over the batter.
Bake in the preheated oven for approximately 45 minutes, or until the cake turns a beautiful golden brown.
Allow the cake to cool in the pan for a few minutes, then transfer it to a wire rack.
Once cooled, slice it into 8 equal pieces and serve as it is, or with a spoonful of Greek yogurt.
