A Cookie Tribute to the Classic Fluffernutter Sandwich

Ingredients
1 ¼ cups unsalted butter, softened (280g)
1 cup creamy peanut butter (280g) (see note)
1 ½ cups light brown sugar, firmly packed (300g)
½ cup granulated sugar (100g)
1 ½ teaspoons vanilla extract
2 large eggs
2 cups all-purpose flour (250g)
1 ½ teaspoons baking soda
1 teaspoon table salt
1 batch homemade marshmallow frosting or 6-8 cups store-bought marshmallow fluff (make sure to link)
