Mustard Greens:
2 Cloves of garlic
1 tbsp peanut oil (vegetable oil is ok too)
1 pound mustard greens
2 tbsp oyster sauce

Bring a pot of salted water to a rolling boil. Place your chopped mustard greens inside for 2 minutes, stirring to make sure full coverage of the greens. Remove from the water, drain, and plunge into an ice bath (optional). Dry the greens. Add peanut oil to a pan on medium high heat and add your chopped cloves of garlic, then your mustard greens and give it a quick stir. Add in your oyster sauce and continue to stir and mix thoroughly, cooking for another 2-3 minutes.

Bamboo and Green Onions
3 stalks of green onions
4 pieces of fresh bamboo shoots (canned and pre-sliced are ok too)
1 tbsp peanut oil (vegetable oil is ok too)
1 tbsp oyster sauce
Tom Yum Paste (optional)

Add peanut oil to a pan on medium high heat. Add in your chopped green onions and salt and pepper. Add your chopped bamboo shoots and stir for 1 minute. Add in a tbsp of Tom Yum Paste and mash. Then add in your oyster sauce and stir to mix everything together. Stir fry for another 2 minutes.

Tomato and Shrimp
1/2 pound shrimp, de-veined
1-2 pounds tomatoes, sliced
2 stalks green onions
1 tbsp oyster sauce
1-2 tbsp peanut oil (vegetable oil is ok too)
Cilantro, sliced

Add half of your peanut oil to a pan on medium heat. Add your shrimp and cook until 80% finished. Remove and set aside. Add the rest of your peanut oil and increase to medium high heat. Add your green onions, salt, pepper, and stir together. Add your tomatoes and oyster sauce and stir til everything is mixed. Reduce heat to medium and cover. Let sit for 5-7 minutes, occasionally stirring. Once the tomatoes are soft and squishable, add in chopped cilantro to taste and your shrimp giving one final stir.
